Sorrel leaves are long, narrow and light green in color. Reaching over a foot in length, sorrel leaves have little fragrance and don’t reach their flavor peak until later in the growing season. Sorrel grows as a weed in many parts of the U.S.

French sorrel is a cousin to our native wood sorrel. Though not botanically related, the sorrels share the common name as well as a tart, lemony flavor. This flavor, a result of the oxalic acid found in the leaves, makes sorrel an ideal counterpart for the rich sauces in French cooking.
- Place whole leaves on sandwiches.
- Chop coarsely and add to soups.
- Tear and add to any green salad.
